As it is National Tomato Week – bizzarre concept but slightly more useful then National Bluberry Week surely – we decided to slow roast a couple of trays to bring a little Itallian sunshine into the restaurant. Introducing the aubergine aka the eggplant, melongene, brinjal or guinea squash. We love this vegetable if only because when we normally get to eat it we are sitting in a foreign land with a glass of wine and not a care in the world.
